Annatto oil has an unique color due to the high levels of two reddish compounds: carotenoids and bixin. Carotenoids, important liposoluble pigments, are mainly responsible for the intense red color of annatto oil, which has about 6 times more carotenoids than carrots. Bixin, an organic and natural chemical substance, has a highly red color, and is the main compound of annatto with a coloring effect. Its color also acts actively on the antioxidant activity of annatto, protecting cells from oxidative damage from free radicals and thus ensuring the protection of skin tissue. Studies indicate that, among the entire chemical composition of annatto, 5% represent active dyes, among which, more than 80% are due to the presence of bixin.
