ProMelt® has a clear, transparent gel and a very mild odor. This starch was developed for application in processed cheeses, curd cheese, dulce de leche, creams and fillings. It is stable to cooling cycles. In analogue cheese, after a few hours, the product has the ideal firmness for slicing or grating. During ovening, analogue cheese behaves similarly to traditional cheeses.
